I usually use my Opinel Carbon Blade No. 8 to separate a painting off the watercolor block. I used to use it at the bar cutting fruit, but I found that the maintenance of a carbon blade at work was too much, cutting all that citrus. Switched to a stainless No. 11 for work, and this one lives in the drawer of my painting desk. I love how it's aged, and I like sharpening and oiling it for tip top tasking.
